Prepare a double boiler: take two pots of different sizes and fill the larger one with water so that the bottom of the smaller pot doesn’t touch the water.
The water in the double boiler shouldn’t reach a boil, but it should be hot enough to see small bubbles forming.
In the top pot, add 3 egg yolks and 3 tablespoons of sugar (you’ll use the rest later).
Whisk with an electric mixer until the egg yolks are completely pale.
If you have a kitchen thermometer, stop whisking when the mixture reaches 71°C (160°F). Otherwise, go by your instincts.
Remove the pot with the egg yolks from the double boiler and let it cool for a bit.
Mix the lukewarm egg yolks with the mascarpone. Then whip the cream with the remaining sugar until stiff peaks form and fold it into the rest of the cream mixture.
Whisk the ceremonial matcha with water and pour it onto a plate.
Layer the matcha-soaked ladyfingers and cream alternately, always finishing with a layer of cream.
Smooth the top and dust with matcha. Let it rest in the fridge for at least 4 hours, or even overnight.
